Emgrobes’ “A Cociña do Mar” promotes the escupiña and the mújol

The Seafood Festival once again hosted the traditional ‘A Cociña do Mar’ event, organised by Emgrobes. On this occasion, Manuel Domínguez, a chef from O Grove at the Senlleiro restaurant, along with chefs Alberto Sobral and Rocío Garrido, were responsible for presenting the public with a selection of dishes featuring mullet and spiny dogfish as the star ingredients.
The viewing area at the O Grove fish market, where the dishes were prepared, proved too small to accommodate all the attendees who sampled the various recipes paired with D.O. Rías Baixas wine.
Domínguez presented the public with escupiña in apple and jalapeño gazpacho, and mullet in ajada with crisps. For his part, Sobral prepared the escupiñas in meunière sauce and the mullet in a faux caldeirada.
There was a third round of tapas to delight the attendees, prepared by Rocío Garrido, who served escupiñas in a mango and tomato tartare, on the one hand, and cured mullet with vegetables and seaweed, on the other.
The cooking session was attended yesterday by the Regional Minister for the Sea, Marta Villaverde, and the Member of the Regional Parliament, Marcos Guisasola, who highlighted the importance of this gastronomic highlight. Both sampled the dishes alongside the mayor, José Cacabelos, and the Councillor for Tourism, María López, who presided over the packed hall.
