Book launch: “Training to Serve”

As part of the programme for the Seafood Festival, a book launch was held for Miguel Otero’s work, *Formar para servir* (Training to Serve), which proved a great success in terms of attendance, given the importance of the hospitality industry in the town. The book delves into the world of front-of-house service. The author, who works in the Canary Islands training waiters and front-of-house staff, shared his experiences with the audience before presenting the two volumes of the book. Otero spoke of his roots, of the Gran Hotel de A Toxa as a training ground for hospitality professionals, and of hundreds of anecdotes that also resonated with the audience’s own memories.
The first volume of the book, which captures the essence of day-to-day front-of-house work, as Otero emphasises, covers techniques, procedures and customer service, amongst many other aspects, and is designed to help readers understand and organise their work. The second volume deals with management, leadership, human resources and even technology applied to service. It is a work aimed at improving efficiency in the workplace.
A work which, ultimately, stems from the trade he began at a very young age in his hometown, O Grove, and which he continues to develop through the training he delivers in the Canary Islands.
